Behind the Banquet: How Marriott Vietnam Chefs Perfect the Art of Indian Flavours
Wedding Planning - Sep 11, 2025
At every Indian wedding, food is more than just sustenance. It is an emotion, a centrepiece of celebration, and often, the most cherished memory guests carry home. From the tang of a perfectly spiced chaat to the comfort of slow-cooked curries, every dish tells a story of heritage and togetherness.
The culinary teams at Vietnam’s Marriott hotels have embraced this ethos with remarkable finesse, curating Indian menus that transcend borders. Blending meticulous training, cultural sensitivity, and creative flair, their chefs transform wedding banquets into vibrant feasts that feel unmistakably Indian, yet uniquely Marriott.

To understand how this passion translates into practice, we spoke to brand representatives from Renaissance Danang Hoi An Resort & Spa, The Westin Resort & Spa Cam Ranh, and Sheraton Phu Quoc Long Beach Resort, who shared insights into their culinary journeys with Indian flavours.
Renaissance Danang Hoi An Resort & Spa

WeddingSutra: How do you incorporate Hoi An’s fresh local produce and spices into traditional Indian wedding dishes?
Mr. Piyoros Naronglith, General Manager of Renaissance Danang Hoi An Resort & Spa explains, “Our Executive Chef from Bangladesh brings a wealth of expertise in Indian cuisine, while thoughtfully weaving in Hoi An’s abundance of herbs, spices, and seasonal produce. Ingredients such as lemongrass, basil, chilli, and local vegetables are integrated into curries, biryanis, and chutneys, lending them a vibrant freshness while retaining their authentic flavors. The result is a menu that remains deeply rooted in Indian traditions yet enriched with the distinctive essence of Hoi An.”
WeddingSutra: Are there any live counters or street-food-inspired setups that couples particularly love here?
“Live stations always add excitement to the celebrations. Couples often delight in Vietnamese and Hoi An favorites such as pho, bun, goi cuon, or freshly grilled seafood BBQ prepared on the spot. At the same time, our chef crafts authentic Indian-style live counters featuring chaat, dosas, or tandoori grills. Together, these create a lively, market-inspired ambience that guests thoroughly enjoy,” shares Mr. Piyoros Naronglith, General Manager of Renaissance Danang Hoi An Resort & Spa.
WeddingSutra: Any extra inputs to enhance the topic?
Mr. Piyoros Naronglith, General Manager of Renaissance Danang Hoi An Resort & Spa adds, “What sets weddings here apart is not only the authenticity of the cuisine but also the way we interweave South Asian traditions with the cultural charm of Hoi An. Couples often choose to elevate their celebrations with lantern-lit décor, local music, or tailor-made menus that reflect their story. With versatile venues ranging from oceanfront lawns to grand ballrooms, and a team deeply attuned to detail, every wedding here becomes a seamless blend of heritage and place.”
The Westin Resort & Spa Cam Ranh

WeddingSutra: How do you bring Cam Ranh’s fresh local produce and tropical flavors into Indian wedding menus?
Ms. Jamie Lee – General Manager of The Westin Resort & Spa Cam Ranh shares, “Cam Ranh is renowned for its fresh seafood, lobster, and the lush Cam Lam mango gardens. We integrate these local specialities into Indian wedding menus with dishes like seafood curries, fusion salads with green mangoes, and refreshing mango or tropical fruit-inspired mocktails. These additions not only reflect the region’s bounty but also bring a signature tropical twist to Indian celebrations.”
WeddingSutra: How do you balance traditional Indian dishes with light, wellness-focused options in line with Westin’s philosophy?
“The Westin Cam Ranh is deeply aligned with the ‘Eat Well’ philosophy. We recently partnered with the Humane World for Animals Organisation to provide training in plant-based culinary techniques, resulting in menus that feature sustainable, Indian-inspired dishes, such as vegan butter chicken masala. By 2025, we aim to increase plant-based offerings by at least 20%, ensuring guests with diverse dietary needs feel included, while still enjoying vibrant Indian flavors,” explains Ms. Jamie Lee – General Manager of The Westin Resort & Spa Cam Ranh.
WeddingSutra: Any extra inputs to enhance the topic?
“Our menu highlights include the Shrimp Cocktail Puri Puff – a nourishing finger food crafted with Cam Lam mangoes, fresh avocados, bell peppers, and Cam Ranh prawns. It has quickly become a favorite among Indian wedding guests and works beautifully across receptions, banquets, or cocktail evenings.”
Sheraton Phu Quoc Long Beach Resort

WeddingSutra: How do you bring in Indian flavors while also offering couples the tropical island dining experience of Phu Quoc?
Mr. Daniel Muhor, General Manager at Sheraton Phu Quoc Long Beach Resort shares, “Our chefs curate menus that remain authentic to Indian cuisine, like rich curries, vibrant spices, and timeless favorites, while seamlessly highlighting Phu Quoc’s fresh produce and seafood. From pairing Indian-style grilled meats with locally caught seafood to infusing desserts with tropical flavors like mango and coconut, we create experiences that blend authenticity with the breezy, island spirit of Phu Quoc.”
WeddingSutra: Do couples hosting weddings in Phu Quoc usually prefer traditional Indian buffets or more modern plated dinners?
“The grandeur of lavish buffets continues to be a hallmark of Indian weddings, offering guests variety and abundance. Yet, we are also seeing growing interest in plated dinners, especially for intimate functions or cocktail receptions, where the focus is on presentation and curated pacing. Many couples now choose a balance, like indulgent buffets for the main celebrations and elegant plated menus for select occasions such as the Sangeet or an engagement dinner”, says Mr. Daniel Muhor, General Manager at Sheraton Phu Quoc Long Beach Resort.
WeddingSutra: Any extra inputs to enhance the topic?
“Sheraton Phu Quoc elevates Indian weddings by blending culinary expertise with the island’s natural charm. Interactive live stations, from chaat counters to tandoor grills, are always a highlight, adding authenticity and engagement to the dining experience. Our chefs also customise menus for vegetarian, Jain, and halal-friendly preferences, ensuring inclusivity for every guest. Combined with Phu Quoc’s idyllic setting, which includes beachside mandaps, sunset receptions, and tropical backdrops – the resort becomes not just a wedding venue but a culinary destination that celebrates both tradition and place”, says Mr. Daniel Muhor, General Manager at Sheraton Phu Quoc Long Beach Resort.
